The Hidden Truth: It’s Not the Carbs to Blame, It’s the Fats!
Many people think that an excessive intake of carbohydrates is to blame for the onset of diabetes. However, science has been pointing to something else for decades. As early as 1927, Dr. Sansum and Dr. Sweeney demonstrated the negative impact of excessive fat consumption on insulin function. In the 1950s, Dr. Walter Kempner successfully treated type 2 diabetes patients with a low-fat diet, and in the 1970s, Dr. James W. Anderson proved that switching to a high-fiber, low-fat diet leads to a drastic reduction in or even the discontinuation of insulin.
Why does this happen? In 1963, scientist Philip Randle discovered that fatty acids and glucose “compete” to enter the cell (the Randle cycle). Because fats enter the bloodstream faster, they block the action of insulin, leaving glucose trapped in the blood.
